Scenario - Swap Mash to Fries
When a dish includes specific ingredients, guests may wish to swap them for alternatives. While managing the associated stock changes might seem complex, this can be easily handled with a simple configuration in the product setup.
Recipe - Pie & Mash

During ordering the guest wants to swap the mash that normally comes with the pie to fries

This example is using a prep item but it the same process could be setup with a recipe or purchase line -
A swap recipe product will be used to advise the kitchen of the preparation change and correctly adjust the stock reduction
Setup

Create a 'swap' recipe that will be used by the POS operator to add to the order when the guest wants to swap

Add to the recipe the required quantity of fries to depleted
This could be a recipe, prep item or purchase line -
Add to the recipe the required quantity of mash that should NOT be taken from stock when sold
This could be a recipe, prep item or purchase line
The final recipe has the standard quantity of fries and the minus value of mash, if required this swap product could be added to a choice with other options to swap
